  • 1 cup of pitted dates (chopped)
  • 1 cup of chopped walnuts or pecans
  • 2 cups of all-purpose flour (or whole wheat flour)
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder

  • 2 large eggs
  • 1 cup of brown sugar
  • ½ cup of melted butter (or vegetable oil)
  • 1 teaspoon of vanilla extract
  • ¾ cup of milk or buttermilk

Instructions

  • Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper.
  • Soak the Dates: Place chopped dates in a bowl and cover them with hot water. Let them soak for 10–15 minutes. Drain and pat dry.
  • Mix Dry Ingredients: In a large mixing bowl, whisk together flour, baking soda, baking powder, and salt.
  • Mix Wet Ingredients: In another bowl, whisk eggs, brown sugar, melted butter, vanilla extract, and milk or buttermilk until smooth.
  • Combine Wet and Dry Ingredients: Gradually fold the dry ingredients into the wet mixture until just combined.
  • Add Dates and Nuts: Gently fold in the soaked dates and chopped nuts.
  • Bake: Pour the batter into the prepared loaf pan. Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
  • Cool and Serve: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
