- 1 cup of pitted dates (chopped)
- 1 cup of chopped walnuts or pecans

- 2 large eggs
- 1 cup of brown sugar
- ½ cup of melted butter (or vegetable oil)
- 1 teaspoon of vanilla extract
- ¾ cup of milk or buttermilk
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper.
- Soak the Dates: Place chopped dates in a bowl and cover them with hot water. Let them soak for 10–15 minutes. Drain and pat dry.
- Mix Dry Ingredients: In a large mixing bowl, whisk together flour, baking soda, baking powder, and salt.
- Mix Wet Ingredients: In another bowl, whisk eggs, brown sugar, melted butter, vanilla extract, and milk or buttermilk until smooth.
- Combine Wet and Dry Ingredients: Gradually fold the dry ingredients into the wet mixture until just combined.
- Add Dates and Nuts: Gently fold in the soaked dates and chopped nuts.
- Bake: Pour the batter into the prepared loaf pan. Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
- For extra flavor, consider adding a teaspoon of cinnamon or nutmeg to the dry ingredients.
